Happy Monday!
We hope everyone had a great weekend! It’s been a long time since we last posted anything. It’s been nice to have a little break from the blog, but we are ready to get back in the saddle again. We made some changes to the blog recently and will soon have a new and improved recipe page. We also had some great food this weekend. Here is a run down of what we had to eat:
Saturday
Breakfast:
Pancakes with blueberries, fried eggs, iced coffee
It’s pretty difficult to beat homemade pancakes on a lazy Saturday morning.
Lunch:
Berry smoothies
Smoothies have become pretty standard lunches for us on Saturdays. If we have a big breakfast and big dinner, this is the perfect lunch to have. After lunch, I (Dave) went with Gavin to an Angry Bird’s themed birthday party. As my cousin and fellow food blogger said after seeing the pictures, “BEST. PARTY. EVER.”
Dinner:
Kabobs (chicken sausage, zucchini, cherry tomatoes, lemon), grilled crostini
Uhhh…turns out adding lemon to kabobs is one of the best things ever. The lemon added just a hint of citrus to everything. This meal made us happy.
Sunday
Breakfast:
Kashi cinnamon harvest cereal with blueberries
This breakfast was great until I choked on a piece of cereal. That was sucky.
Lunch:
Italian sandwich with chips, grapes, and Hansen’s cherry soda
We grabbed a quick lunch before heading out to the pool for the afternoon.
Dinner:
New York strip, grilled corn, tomato and avocado salad, grilled crostini
After our afternoon trip to the pool, we fired up the grill for some New York strip, corn, and grilled crostini. Yes…the same exact bread we had the night before. It was so good, we had to have it again. We just drizzled it with olive oil and sprinkled it with a little sea salt. For the salad, we cut the kernels off the corn cob and added some cherry tomatoes, avocado, lime juice, olive oil, and salt and pepper. This simple salad is a keeper. Love it!
