Last Fall, I (Dave) went to a conference for work at Disneyland Hotel (rough…I know). The food that the hotel served was so incredibly good. It was better than any catered food I had ever had before. One of the meals they served was a Mexican-style meal, and it helped to inspire the food we served for the party.  They served a salad with jicama in it, and that was my first time ever eating jicama. If you have not had it before, it is a cool and crunchy root vegetable with a mild taste. We added some jicama to the salad we served and it was the mystery ingredient of the night. We had about 10 people ask us what the “crunchy white stuff” was in the salad.

The jicama, along with the other ingredients, made for a pretty amazing salad! It was crisp with bright and fresh flavors and was the perfect salad for a Mexican-style meal.

We needed a light and healthy side to go with our grilled chicken breast and honey mustard sauce for our Mother’s Day lunch. After scouring the pantry and freezer for some staples, this pasta salad came together in a snap. The combo of corn and tomatoes screams summer, which we are definitely ready for! We are all for making our own salad dressings, but sometimes it’s so nice to just open and pour! Brianna’s French Vinaigrette was perfect on this salad. It was bold enough to hold up the to flavor of the whole wheat pasta but not over power the other ingredients.

We are a family that appreciates awesomeness, and Newman is about as awesome as it gets…

So it should really be no surprise to anybody that Paul Newman’s food product line, Newman’s Own, is also awesome. We’ve been big fan’s of Newman’s Own for quite some time now and have featured his products in Italian Dunkers, Spaghetti Squash with veggie ragù, and a frozen pizza food face-off (Newman’s won, of course). We love the products because:

  1. They are all-natural
  2. They are affordable
  3. All proceeds are donated to charities
  4. They taste amazing!!!

When the Foodbuzz Tastemaker Program offered us the opportunity to receive a selection of Newman’s Own products, we were stoked!!!

Oh yeah…they also threw in a free flip cam, which means we will be doing some videos in the near future. :)

They sent us various salad dressings, marinara sauces and a coupon for a free pizza. They challenged us to make a healthy and delicious family-friendly meal in under 30 minutes, using one of the products. We decided to take it one step further and made a meal using a salad dressing, a marinara sauce and a pizza!

Our master plan was to have soup, salad and breadsticks. It’s such a simple and satisfying meal. There’s something for everyone!

Let’s just show you the picture, cause this one is a Beaut!

We were in need of some comfort food, but also wanted it to be fresh and somewhat healthy. We felt like fried food, but didn’t want to end the night groaning pathetically on the couch. You know what I mean. The last time we had food that was deep fried we were down and out for 2 days….we’re not exaggerating! We’ve learned our lesson (for now).

This Chicken Milanese really hit the spot. The chicken was crispy and juicy. The fresh, simple salad kept it light. Loved it!!! And then the Roasted Garlic Potatoes…MMMmmm.

We are big fans of buffalo wings in our household. In fact, we are often looking for ways to incorporate the concept of buffalo wings into new dishes. Sarah has been talking about trying a Buffalo Chicken Leg lately, so when we noticed that chicken legs were on sale the other day we decided to give it a shot. Buffalo Chicken Legs are almost identical to Buffalo Chicken Wings, but they are grilled instead of fried and are much bigger! We also tried something that was new to us…grilled lettuce. If you have never had it, we know that it sounds really weird, but it was great! The lettuce has a smokey taste to it. We topped the grilled romaine with crumbled bacon, diced tomatoes and cucumbers, and homemade ranch dressing. We used our homemade ranch recipe, but swapped the quantities of buttermilk and mayo (1 cup buttermilk, 1/3 cup mayo) to make it runnier.

The weather in Iowa was so incredible yesterday! The grill beckoned to us and we were right there to answer the call. After making our Hawaiian Chicken Kebabs, we knew our next grilled meal was going to have to be Iowa Chops. If you aren’t from Iowa, you may not know just how glorious these bad boys are. They are so stinking thick! Other pork chops fall to their knees at the mere mention of the Iowa Chop. I mean, we seriously had a minor league hockey team named after this cut of meat! How awesome is that?

We decided to pair the chops with a side that both of our dads always made on the grill when we were growing up — potatoes, carrots and onions (or foil potatoes as we now call them). The potatoes get all crispy and golden brown. Yum!

We also wanted a light salad, so Sarah threw together a really healthy strawberry spinach salad with an amazing homemade dressing.

Our friends, Rob and Ami, shared this idea for a salad with us last year and it quickly became one of our favorite meals. We can’t help but think of Seinfeld when we eat this, so we call it “The Big Salad.” We know that it may look kind of weird to have roasted potatoes in a salad, but the flavors of everything work really well here. We love to eat it with some multigrain ciabatta. Yum!

Ranch Salad
Prep Time: 10 minutes
Serving: 6

Ingredients
3 Romaine hearts, chopped
1 cup shredded carrots
1/2 English cucumber, sliced and cut into half moons
15 halved cherry tomatoes
Homemade Ranch
Jimmy John’s croutons

Toss romaine, cucumbers, carrots and tomatoes together. Drizzle with dressing and toss until everything is coated. (Start with a little…you can always add more!) Top with the croutons.

Ranch Dressing
Prep time: 5 minutes

Ingredients
1 scallion (white and green parts)
1 small or 1/2 medium clove garlic
1 cup mayonnaise
1/3 cup buttermilk
1 teaspoon white wine vinegar
1/2 teasoon kosher salt
2 tablespoons fresh flat leaf parlsey
Freshly ground black pepper

Roughly chop the scallion. Smash and peel the garlic. Put the scallion and garlic into the blender or food processor and pulse until the garlic pieces stop bouncing around.

Croutons are a great way to add flavor and texture to salads. Some store bought croutons are fantastic, while others are hard as rocks and taste like cardboard. Unfortunately, the croutons that taste the best are often the most expensive. That’s where our good friend, Jimmy, comes into play.

We LOVE Jimmy John’s. We love it to the point that we could eat it every single day. We love it so much that we found a way to use Jimmy John’s in our salads.

If you have been to Jimmy John’s before, you may have noticed that they sell their day old bread. It can vary slightly in price depending upon where you live, but it usually costs about 45¢. That is a whole lot of goodness for not a whole lot of money. Next time you go there to grab a sandwich, pick up one of these bad boys and give this recipe a try.
