School and football have started and there are only two more weeks of Summer left on the calendar. But that doesn’t mean you have to roll the grill into storage for the winter! We love this time of year because we get to experience the best of summer and fall foods. On any given day, we can either make a pot of chili or grill a burger!

For this meal we decided to go with a grilled turkey burger. We often have this attitude that we need to load our burgers up with 12 different toppings.
“This is America, dang it! If I want 12 toppings on my burger, I will put 12 toppings on my burger!”
But sometimes the best burgers are the ones that are the simplest…

Spicy Turkey Burgers
Serves: 4
Total Time: 20 Minutes
Ingredients
1 lb lean ground turkey
salt and pepper
extra virgin olive oil
1/2 cup mayo
1 teaspoon dried chipotle flakes
or 3/4 teaspoon chili powder and 1/4 teaspoon cayenne pepper
4 slices pepper jack cheese
4 romaine lettuce leaves
4 whole wheat english muffins, sliced

Directions
Pre-heat your grill to high. Divide the ground turkey into four equal patties.

Season the patties with olive oil, salt and pepper. Place on the heated grill for 5 minutes. Flip and grill for 3 more minutes.

Add cheese slices and continue to grill for 2 more minutes Remove the turkey burgers from the grill, cover with foil and let them rest for 3-5 minutes before serving. Look at all the cheese!!!

While the burgers are resting, mix the chipotle flakes into the mayo. Spread the mayo onto the english muffins. Add the burgers and top with the lettuce.
We served our burgers with a cowboy salad and chips with “quick-guac.”

Quick-Guac is a very easy way to make delicious guacamole. Simply smash a couple ripe avocados, add a couple pinches of salt, a few squeezes of lime juice and a few spoonfuls of your favorite fresh salsa. We prefer Jack’s Special Salsa!

The Cowboy Salad was a quick salad we came up with after looking through our fridge and cupboards. It is similar to Cowboy Caviar, if you have ever had that before. But while Cowboy Caviar is more of a salsa for dipping chips in, our version is hearty enough that you could just eat it with a fork. It is so quick and easy to make!
Cowboy Salad
Prep Time: 5 minutes
Serves: 2
Ingredients
1/2 can of black beans, drained
1 cup of corn
1/2 green pepper, diced
2 Roma tomatoes, diced
crumbled feta cheese
fresh cilantro
Dressing
2 teaspoons red wine vinegar
2 teaspoons extra virgin olive oil
1 teaspoon agave nectar or sugar
juice of half of a lime
salt and pepper to taste
Directions
Place the beans, corn, peppers and tomatoes into a medium bowl. In a separate bowl, mix together the ingredients for the dressing. Add the dressing to the salad and stir until coated. Serve with crumbled feta cheese and fresh cilantro.

This entire meal can be on your table within 25 minutes. Each component was so simple and quick, but more importantly it all tasted incredible.
