Last week we caught you up on the dinners we had in our last days at our old house, Turkey Fried Quinoa and Mac and Cheese. This week it’s time to catch up on the dinners we’ve had since moving to our new house. We didn’t want these beauties to slip through the cracks! First up…Tortellini Soup. We posted pictures of this hearty soup in 1 Cup Awesome Weekend, and promised the recipe would follow. We’re keeping our promise, and you’ll be glad we did! You have to make this as soon as possible! It’s fresh, healthy and super flavorful. Combining marinara and chicken stock makes the perfect tomato based soup. And it is so simple since it’s already seasoned so well! This, paired with all the tender crisp veggies, is a knockout. It has just enough tortellini and parmesan cheese to make feel indulgent. Are you hungry yet?!
Tortellini Soup
Serves: 4-6
Total Time: 30 Minutes
Ingredients
3 carrots, peeled and chopped
1 onion, chopped
1 small zucchini, chopped
3/4 cup green beans, chopped
2 cloves garlic, minced
Extra Virgin Olive Oil
Salt and Pepper
1/2 tsp ground oregano
1 can fire roasted tomatoes
1 jar marinara
1 quart chicken stock
1/2 pound frozen tortellini
Grated parmesan cheese
Directions
Chop the vegetables into bite-sized pieces.
Heat olive oil over medium heat. Add carrots and cook for 2-3 minutes. Add the onion and garlic and cook for another 2-3 minutes.
Add the green beans and zucchini and cook for an additional 2-3 minutes. Season with salt, pepper and oregano.
Add the tomatoes, marinara and chicken stock. Raise the heat and bring to a boil.
Add the tortellini and boil for 4 minutes until the pasta is cooked through. Reduce heat and simmer for 10-15 minutes. Serve topped with grated parmesan cheese.

This used to be a regular for us, but for some reason we haven’t made it for well over a year. Once we had a bowl of this hearty goodness, we just kept saying, “Why haven’t we made this for so long?!” It tasted better than ever!!
