Every now and then we eat something and think, “Hmm these foods aren’t all that appealing by themselves. But, then you put them all together and …magic!” Exibit A: Ruebens. Let’s break it down.
Rye bread. We both happen to love love rye bread, but it is a very strong flavor.
Corned beef. Eh…take it or leave it. Mostly leave it. (Unless it’s St. Patricks day, of course.)
Swiss cheese. Super stinky.
Sauerkraut. Need we say more?
And who the heck likes thousand island dressing? See where we’re going here?
BUT. When they are layered all together and slathered with butter and grilled to a warm crispy perfection, it is a thing of beauty. Suddenly salty, stinky and sour never tasted so good! Right?! Well, we think so! We both love the flavors of a reuben. One of our favorite meals is Reuben Hash which we make once a year. What we don’t love is all the calories that go with this favorite sandwich. So we put together a slimmed-down version.
Turkey Reuben Sliders.
We started with pumpernickel dinner rolls spread with whole grain mustard as a substitute for the 1000 island dressing. Much better flavor in our opinions….and it takes the calorie count way down. Win!
Next, we layered sliced deli turkey breast (much healthier than corned beef), swiss cheese and a scoop of sauerkraut.
To get them all melty and warm we wrapped them in aluminum foil and baked them in a 350°F oven for about 20-25 minutes. (Just like hot ham and cheese for school lunch!!) These sliders were awesome with a side of baked sweet potato fries! So good!!
Two of these sliders are still smaller than a restaurant sized reuben sandwich. But your tummy doesn’t think so. They are totally satisfying. And since we didn’t use butter we saved another load of calories. Since it’s such a flavorful dish you really don’t miss all the other stuff! Save the butter for dessert!
These would be great addition to the gameday or tailgating menu this weekend!
